Diagnosis and Repair for Broilers That Will Not Light, Heat Evenly, or Hold a Flame
We trace cold zones and weak flames to clogged burner ports, damaged burners, shifted radiants, grease buildup, or incorrect gas pressure. Radiants and briquettes also need to be seated correctly before the heat will spread evenly across the grate.
Infrared units depend on intact ceramic emitters and a clean, even burner flame. We inspect cracked or plugged tiles, ignition components, air shutters, orifices, and regulators to identify the cause of low heat.
A pilot that will not light or stay lit may have a blocked pilot orifice, weak thermocouple, dirty flame sensor, failed spark igniter, or a safety valve that is not proving flame. We test the ignition sequence and gas controls before replacing parts.
We service sticking burner valves, broken knobs, slow-opening safety valves, damaged burner assemblies, and loose control wiring. On adjustable salamanders, we also inspect the rack, carriage, and heat-position controls for safe movement.

Uneven heat usually comes from clogged burner ports, grease or carbon buildup, damaged burners, radiants or briquettes sitting out of position, cracked infrared tiles, or low gas pressure. The grate may look clean while buildup below it is disrupting the flame pattern.
A dirty pilot orifice, weak thermocouple, misaligned flame sensor, failing safety valve, or unstable gas pressure can shut the pilot down. If the unit uses electronic ignition, the igniter, flame-sensing circuit, and wiring also need to be checked.
Yes. A radiant charbroiler transfers burner heat through metal radiants, rock, or briquettes. An infrared unit uses ceramic emitters that can crack or become plugged. The flame, air mixture, and gas pressure matter on both designs, but their heat-transfer parts fail differently.
Yellow flames and soot point to incomplete combustion. Common causes include restricted burner ports, a blocked air shutter, the wrong orifice, incorrect gas pressure, or a burner that is not seated correctly. Stop using the unit if you smell gas or see heavy soot and call for service.
Most units should be inspected at least every six months. Busy charbroilers that collect grease and carbon quickly may need quarterly service. Daily grate cleaning helps, but the burners, pilots, radiants, valves, and air openings below the cooking surface also need periodic inspection.
